For the soup:
1 pound ground beef
1 onion, diced
1 (4-ounce) can green chiles, mild
2 cups chicken stock
1 (28-ounce) can diced tomatoes
2 tablespoons taco seasoning
2 (14-ounce) cans black beans, drained
1 cup frozen corn
1 green bell pepper, diced
1 red bell pepper, diced
For the optional toppings:
cheese, to taste
sour cream, to taste
cilantro, to taste
green onions, to taste
avocado, to taste
In a large soup pot over medium-high heat, add the beef and the onions.
Cook the beef until browned, about 5-7 minutes.
Lower the heat to low.
Add the green chiles, the chicken stock, the diced tomatoes, the taco seasoning, the black beans, the corn, the green bell pepper, and the red bell pepper to the meat mixture.
Simmer the soup until slightly thickened and the flavors have melded together, about 30 minutes.
Serve with your favorite toppings.
